Some of Vermont’s most memorable dining experiences are tucked away in places you might not think to look. And Junction, located inside The Essex Resort & Spa in Essex, is a perfect example.
While The Essex is well known for its spa, culinary classes and resort accommodations, Junction has long been one of its most interesting offerings. It’s a fine-dining restaurant with an interactive chef’s table experience, where guests can watch the kitchen at work while enjoying a beautifully prepared meal.
And for anyone who loves food as much as I do, there’s something pretty entertaining about having a front-row seat to the action.
Junction brings together the sophistication of a special occasion restaurant with the energy of a working kitchen. You can watch dishes being prepared, ask questions about ingredients and techniques, and see just how much work goes into the food that eventually arrives at your table.
It’s a dining experience that deserves far more attention than it gets.
A Fine-Dining Destination Hiding in Essex
Located just outside Burlington, The Essex Resort & Spa has built much of its identity around food.
The resort’s culinary programming includes cooking classes, hands-on workshops and several dining options. Junction has traditionally been the property’s more elevated restaurant, offering a seasonal menu and a dining room designed to encourage interaction between guests and the kitchen.
The interior has a contemporary Vermont feel, with natural wood, warm lighting and a large fireplace. It’s comfortable and refined without the formality that sometimes comes with fine dining.
I love that you can dress for a special evening without feeling like you’re walking into a restaurant where everyone is expected to whisper.
And while the resort attracts plenty of overnight guests, Junction has also been a destination for locals looking for a memorable dinner.

The Chef’s Table Is the Best Seat in the House
If you’re visiting Junction, I’d recommend requesting a seat overlooking the open kitchen.
The chef’s counter has traditionally accommodated a small number of guests, providing an up-close view of the culinary team preparing dinner.
It’s fascinating to watch.
You can see the coordination required to prepare several different dishes at once, from searing proteins and finishing sauces to carefully arranging each component on the plate.
There’s a rhythm to a well-run restaurant kitchen that you don’t usually get to experience from a traditional dining room.
And at Junction, that’s part of the entertainment.
I love being able to watch a dish come together before it’s served, particularly when the preparation involves techniques or ingredients I’m less familiar with.
The interaction also gives you an opportunity to ask questions, learn about the menu and get recommendations directly from the people preparing your meal.
Of course, you can also simply sit back and enjoy watching the kitchen work.
What to Expect From the Menu at Junction
Junction’s menu has historically focused on seasonal ingredients, creative preparations and dishes that make use of Vermont and New England products.
The resort has maintained culinary gardens, incorporating fresh herbs and vegetables into its menus when available.
During a previous visit, the menu included winter squash fritters with harissa aioli, chicken liver pâté with pickled grapes and grilled country bread, and pan-seared scallops served over sweet corn polenta with rosemary brown butter.
Other offerings included house-made pappardelle with spicy chorizo, seared duck breast and filet mignon with béarnaise sauce.
The presentations were beautiful, but what made the meal particularly interesting was watching the dishes come together from the chef’s counter.
Junction has also offered inventive desserts, including house-made chocolate creations and panna cotta.
The menu changes seasonally, so I’d recommend checking current offerings before visiting rather than planning around a specific dish.
A Different Way to Experience Fine Dining
One of the things that sets Junction apart from other Vermont restaurants is the opportunity to engage with the culinary process.
At many fine-dining restaurants, the kitchen is deliberately hidden from view. Your meal arrives beautifully plated, but you rarely see what happens behind the scenes.
Junction takes a different approach.
The open kitchen becomes part of the dining room, and the chefs’ work is incorporated into the experience.
It’s particularly appealing for anyone interested in cooking, restaurant operations or the artistry involved in preparing a beautiful meal.
And I think it’s a wonderful idea for a special occasion.
Instead of simply going out for dinner, you’re spending the evening learning a little about the food and watching the people responsible for creating it.
Make an Evening of Visiting The Essex Resort & Spa
If you’re planning a special dinner at Junction, consider making time to enjoy more of The Essex Resort & Spa.
The property has a full-service spa, with massages, facials and other treatments, along with indoor and outdoor amenities.
The resort’s Cook Academy has also offered hands-on culinary classes, which would be a fun activity for couples or groups interested in learning something new.
And if you’d prefer a more casual meal, The Essex has traditionally offered additional dining options, including tavern-style food and drinks.
I love the idea of pairing a spa afternoon with a chef’s table dinner, particularly during winter when a little pampering sounds pretty wonderful.
